Overnight Marinated Mushrooms

I am a HUGE marinated mushroom fan. I can eat the whole jar if I don't stop myself. I don't buy them often because they are sooooo expensive plus a small jar doesn't go very far. I used to be able to buy a huge jar from Costco for a great price but they don't seem to sell it anymore at the one near me. So off to making my own. 



Ingredients

15 cremini mushrooms ( approx 4 cups quartered ) 
1/4 cup EVOO ( extra virgin olive oil ) 
1/4 white vinegar
1/4 cup red onion
1/4 cup parsley
1/4 cilantro 
3 garlic cloves
1/2 roasted red pepper ( jarred or homemade )
1 tsp dried oregano
1 tsp salt
1 tsp mixed pepper corns
2 tsp coconut sugar
1 tbsp lemon juice ( fresh squeezed or store bought ) 
**use organic when possible 
Yields approx 2 cups

Method

Bring a pot of salted water to boil. 
Rinse dirt off mushrooms then quarter them and add them to the boiling water and cook for approx 3 minutes. Just to soften them up a bit.
Drain and let sit in the mesh sieve on an angle till your done the next step.

Add the oil, vinegar, sugar, pepper corns, salt, lemon juice & oregano to a mixing bowl.
Finely chop onion, garlic, red pepper, parsley, cilantro and add the the bowl. Give it a taste test, this is where you can add another or more of any ingredient is you wish to. 
Mix well and add the mushrooms. Stir till the mushrooms are fully coated.



Place in a glass jar with lid and refrigerate overnight.

VoilĂ ! Easy, simple overnight marinated mushrooms.
**Tip: DO NOT throw out your marinade after you have eaten all the mushrooms. This is great drizzled over some steamed veggies or on your plain pasta or potatoes.
