If you love coconut, here is a cookie for you.
Ingredients
1 cup coconut flour
1/2 cup coconut sugar
1/2 cup coconut oil
1 1/2 tbsp coconut nectar
1/2 cup unsweetened shredded coconut
1/2 cup dark chocolate chips
4 flax eggs ( see below ) ( works just as well with 4 eggs )
Pinch of salt
Method
Preheat oven to 375.
Mix 4 tbsp of flax meal to 12 tbsp warm water, let stand for about 30 minutes.
Till it's a thick gooey consistency.
Melt coconut oil in microwave. Add it and all the ingredients except flax to a mixing bowl.
When flax eggs are ready add them and mix well.
Line cookie sheets with parchment paper.
Form 20 balls and place onto baking sheets.
Press with a fork.
Bake for approx 15-18 minutes or till brown.
These will be a soft cookie
