Protein Breakfast Cookies


On the run and need a quick fix breakfast, snack or fuel for pre or post workout? Try eating a balance of protein & healthy fats to keep you energized & satisfied. This recipe is full of healthy nutrients sure to nourish you for your needs & the best is it's kid approved 🍪👍. 
Gluten free, dairy & egg free plus vegan. High in protein, fiber and loaded with vitamins & minerals. 

Ingredients

1 1/4 cups quick oats
1/4 tsp salt
1/4 tsp cinnamon
1 cup almond butter
1/4 cup coconut nectar ( or maple syrup or agave )
1 large ripe banana
1/2 cup chocolate chips ( or cacao nibs )
1 tbsp hemp seeds
1 tbsp ground golden flaxseeds
1 tbsp sunflower seeds
* use organic when possible 

Method

Mash banana in bowl, add almond butter & coconut nectar and mix.
Add the remaining dry ingredients and mix well.
The batter will be sticky.
Add ten scoops of the batter to a greased baking sheet and shape and flatten each cookie as they will not spread while baking.


Bake at 325 for 20 minutes
