Quick Dip


      Garbanzo Bean & Artichoke Dip




Running short on time or have unexpected company pop in? Keeping a few quick grabs in the pantry will prepare you for times like these. This is what I pulled out of my pantry.

Ingredients

1 cup canned garbanzo beans ( low sodium )
6 1/2 pieces of marinated artichoke hearts ( well drained )
1 tbsp nutritional yeast ( red star brand )
1/2 tbsp extra virgin olive oil
1 tsp fresh thyme ( or use dried )
Salt & pepper to taste

* use organic when possible 
* Tip: red star nutritional yeast is the only brand that offers vitamin B12. I suggest to always use this brand. First because we often fall short of this essential nutrient plus as we get older our bodies can not absorb it as efficiently. 😊

Method 

Add beans & artichokes to blender or food chopper and pulse to mix them slightly
Add everything else except oil and blend a little more
Add oil and mix to a smooth consistency 
Voila! Quick easy and delicious.

Yields 1 1/2 cups
Or six 1/4 cup servings
