Artichoke Tomato Dip


A simple & quick to make dip. 
Vegan, dairyfree, sugarfree, grainfree, glutenfree, low carb, diabetic friendly & heart healthy,

Ingredient's

1 cup jarred marinated artichoke hearts + 1/4 cup of its oil
1/4 cup red onion
3 lrg cloves of garlic
1 tbsp fresh squeezed lemon juice
4 cherry tomatoes 
1/4 tsp each salt & pepper or till your taste
Yields approx 1 1/4 cups
** use organic when possible**

Method

Add all ingredients to a high speed blender or mixer. I used my mini KitchenAid.
Blend till smooth. Give it a taste test. At this point add more salt or pepper or even oil if it's not the consistency you like. 
*tip- the tomatoes will add liquid to the recipe. Adding to much oil will make the dip running after sitting for a bit. 

This recipe can be used in many ways. 
Use as a: 
Dip for your favorite veggies or crackers
Sandwich or burger spread
Incorporate into to pasta sauce
Pizza sauce 
Top onto your zoodles or any veggies-cooked or raw 
Salad dressing

The possibilities are endless. What I love the most about recipes like this besides it being quick & simple is I like to premake a few different kinds so I'm stocked up for a few days. This makes cooking for those few days also easier & simpler. Nothing like a quick healthy grab with endless possibilities when making a meal.
