Pasta fermentata

                                    
My new food pick is this awesome Pasta! I stopped eating regular pasta a long long ago. My daughters find some of my substitutes sometimes to much of a change. Examples are seaweed noodles, spiralized  zucchini,  spaghetti squash and tofu noodles. Being that this type is so similar to regular pasta, it's an easy transition. The taste and texture is very much like what they are used too. Also if I can add extra nutrients without them knowing, I'm thrilled.
What is so great about this product is it's Dairy, Salt & Egg free. It's Vegan, a Probiotic and all types are naturally Fermented which aid in Digestive Health. To good to be true? Nope it's so true and so delicious. Not your average noodle at all.  It's definitely more hardy than rice and corn pasta, which are some of what we eat in our house. However the corn & rice noodles texture changes. They tend to get hard and are not as good as left overs compared to freshly made. This product does not. It truly is the same as regular pasta. 
It does cook quicker and may get a bit to soft to enjoy if you over cook it, which is the same for rice & corn noodles too.
They are still High in iron, Fiber & Protein like most pastas, but it's the fermentation that is what is so unique. 
Fermented foods have been through a process of lactofermentation in which natural bacteria feeds on the sugar and starch in the food creating lactic-acid. This process preserves the food and creates beneficial enzymes, Vit B vitamins, omega 3 fatty acids and various strains of probiotics. Natural fermentation of a food has shown to preserve nutrients in food and break the food down to a more digestible form. If you have digestive problems you may seek this type of pasta.
